It's a conscious decision to think, walk and possibly, talk a better lifestyle. 

I support individuals who are thinking about making the shift, as well as, those who have already begun their plant-based journey.

Should we consume soya? Is it safe?

I've heard a lot of varying comments about soya so I thought I'd ask a friend of mine to write an article examining whether it's safe to consume or not! Over to Sagar Kirit Shah.

Can anyone avoid soya?

For many vegetarians and vegans, soya products may seem almost impossible to avoid. The most widely available substitutes for dairy products (milk, cheese, ice cream) and meat (tofu, tempeh, burgers, sausages) are made from the soya bean. And other soya products such as soya oil and soya lecithin are common ingredients in many processed foods found in modern supermarkets.

Stifled about soya!

For some, soya is confusing and controversial.

From a health perspective, soya is claimed to be a high protein, miracle health food which can help reduce cholesterol. But others have linked it to cancer and/or reduced fertility.

Vegetarians and vegans often note the environmental advantages of soya as it produces more protein per acre than almost any other food. Yet critics often point out how soya is associated with the GM industry and rainforest destruction.

Over the next three posts, I aim going to unpick these controversies a little to help you make up your mind about whether to eat soya products, and if so, which products to eat.

Recipe: Cauliflower Shaak (curry) within 25 minutes

Cauliflower Shaak is a nutritious dish which can be enjoyed with wraps, rice, Rotli or even on its own. This recipe serves 2.

Ingredients for the cauliflower Shaak

  • 1 small cauliflower
  • 2 tomatoes
  • 1 fresh chilli
  • Oil
  • 1/2 a teaspoon of Rye
  • 1 teaspoon of Cumin seeds
  • Sweet Neem Leaves
  • A pinch of Asafetida
  • A pinch of Turmeric powder
  • Salt
  • 1 teaspoon of dried coriander powder

How to make the cauliflower Shaak

  1. Chop the cauliflower up into small pieces - it's tastier if the pieces are small
  2. Chop the tomatoes and blend
  3. Add the chilli and blend it all for another 5 seconds
  4. Heat some oil - I use sunflower oil or coconut oil
  5. When it's heated, add the Rye and Cumin seeds
  6. Add the Sweet Neem Leaves and Asafetida
  7. After the seeds have popped add the blended tomatoes and chilli
  8. Let it cook
  9. Add the cauliflower
  10. Add the Turmeric, salt to taste and the dried coriander powder
  11. Stir and let it cook until you feel it's ready to be served - some people like it very soft and others like to eat it when it's semi cooked
  12. Garnish with fresh coriander

Vegan Salzburg

How travelling to Salzburg got on my list of places to visit

I had travelled around Europe a few years back. One of those tours where you visit different cities over two weeks. Well...we stopped over at Salzburg for only an hour or so and I've wanted to go back ever since!

The little part I saw was beautiful, clean, scenic, green and just so inviting.

Review of Riverside Cafe in Stamford

Suraj and I went away for the weekend.

We drove to Stamford, which was near where we were staying  and we spotted this gorgeous Cafe which overlooked the river.

We went in and were impressed with the variety of vegetarian options on the menu. We asked the waitress if there was anything that could be 'made' vegan and she said she'd ask the Chef.

Toast which is savoury yet refreshing

Suraj made this for us a couple of days ago. It was quick, tasty and positively different.

This recipe serves 2.

Ingredients

  • 4 slices of brown bread
  • Hummus
  • English mustard
  • 1/2 cucumber

Method

  1. Lightly toast some brown bread
  2. Spread Hummus on it
  3. Spread some Mustard on top of the Hummous - we use English Mustard as it's vegan
  4. Add sliced cucumber
  5. Add crushed salt and pepper to taste
  6. Serve on a small plate and enjoy it with a cuppa
