Recipe: Adas - Red Lentil Soup
This soup is wholesome, comforting and tasty. Perfect for a cold night, when you need warming up.
This recipe serves 4.
Ingredients for Adas - Red Lentil Soup
• 1 tablespoon of olive oil
• 2 celery sticks - roughly chopped
• 1 teaspoon of asafoetida
• 2 teaspoons of cumin seeds
• 1 teaspoon of ground cumin
• 1/2 a teaspoon of ground coriander
• 1/2 teaspoon of chilli powder
• 1 fresh lemon squeezed
• 1 teaspoon of salt
• 175g of split red lentils – soak for 4 hours or longer beforehand
• 1.2 litres of fresh water
• 1 (400g) can plum tomatoes
• 2 teaspoons of tomato purée
• freshly ground black pepper
How to make Adas - Red Lentil Soup
1. Heat the olive oil in a saucepan and then add the cumin seeds and asafetida
2. Let it cook over a low heat until the seeds begin to pop/jump
3. Add the celery and cook it for 3 minutes, stirring frequently
4. Add the chilli powder and ground coriander and cook for 1 minute, stirring constantly
5. Drain the water from the soaked lentils and add the lentils to the pan, along with the fresh water, tomatoes (with the juice) and tomato purée
6. Bring this to the boil, reduce the heat and then half-cover the pan with the lid and let it simmer for 25–30 minutes until the lentils and vegetables are very soft
7. Add the fresh lemon juice and salt
8. Serve in a bowl and garnish with freshly ground black pepper
