Recipe: cheese sandwich with homemade coleslaw
This recipe serves 1
Ingredients for the cheese and coleslaw sandwich
2 slices of wholemeal bread (I prefer Hovis over any other)
1 carrot
1/4 (or less) of a small white cabbage
mustard (I use Colman’s English Mustard)
vegan mayo (I use Hellman’s vegan mayo)
salt
black pepper
1 slice of cheese (I use Violife)
How to make the cheese and coleslaw sandwich
grate the carrots and cabbage
use the size of each vegetable to decide how much you want to grate
if you make too much, you can always put it in the fridge and have it the next day
add the mustard, mayo, salt and pepper and mix it together
taste and adjust
get one slice of bread and put a slice of cheese on it
spread the coleslaw onto the cheese
put the other slice of bread on top, cut it into pieces and enjoy
