Recipe: vegg mayo with a new special ingredient
Ingredients for the vegg mayo
300g silken tofu - I usually use Clearspring’s organic Japanese tofu - silken & smooth
400g of firm tofu - I usually use Tofoo’s Naked XL tofu
1 tablespoon vegan mayo
1 teaspoon of kala namak
1 heaped tablespoon of nutritional yeast
Half a teaspoon of turmeric powder
Half a teaspoon of black pepper
One slice of cheese - I use Violife’s smoked flavour slices
8 slices bread - I usually use Hovis’ wholemeal medium slices
How to make the cheese and coleslaw sandwich
Crumble the silken tofu into a bowl
Dice or crumble the firm tofu and add it to the bowl
Mix both types of tofu together
Add the following to the bowl: turmeric powder, kala namak, pepper, nutritional yeast and vegan mayo.
Mix it all together
Cut the slice of cheese into small pieces
Get two slices of bread, add a quarter of the vegg mayo, add half of the pieces of cheese, add the second piece of bread, slice it into two or four pieces and enjoy
The sandwiches are even nicer with cress but I don’t often have that to hand and they’re so so good even without it, so it’s no biggie.
