Recipe: This choc and nut delight is perfect for any occasion!
I came across a recipe, which I made, enjoyed and later changed to create this delicious dessert, which is quick and easy to make.
Ingredients for choc and nut delight
- 1 cup of Walnuts halves
- 1 cup of Pecan halves
- 4 tablespoons unsweetened cocoa powder
- 250g of pitted dates
- Pinch of salt
- 1 cup natural peanut butter
- Coconut cream from 1 chilled can of coconut milk
- 2 tablespoons Maple Syrup
- 1 ½ cups of vegan chocolate (melted)
How to make choc and nut delight
- Put a can of coconut milk in the freezer
- Blend the nuts, cocoa powder, dates, and salt
- Press this into the base of your cake tin and put it in the freezer
- Heat some water in a pan
- When the water is hot, put the chocolate in a bowl and place it in the pan so that it melts
- While the chocolate is melting, blend the peanut butter and maple syrup and set aside
- Remove the can of coconut milk from the freezer and use a spoon to remove the solid white coconut cream (I usually drink the coconut water that remains, or I use it in a juice)
- Add the coconut cream it to the peanut butter mix, blend it and set it aside
- Spread the melted chocolate on the nutty base in the cake tin
- Put the peanut butter mixture on top of the chocolate
- Create a final layer with the rest of the melted chocolate
- Put it in the fridge for at least 10 minutes before tucking in
