Recipe: Chocolate brownie with a twist
This recipe makes what I call, a brownie in a pot. It doesn't take long to make, the method is easy and it tastes delicious.

Ingredients for vegan brownie with a twist
- 3/4 tablespoon of ground flaxseed
- 1.5 tablespoons of warm water
- 110g dark chocolate - broken into pieces
- 1/4 cup of coconut oil
- 1 and a 1/2 tablespoons of cocoa powder
- 1/4 cup of brown sugar
- 1/2 teaspoon of pure vanilla extract
- 1/2 cup of oat flour
- 3/4 teaspoon of baking powder
- 1/4 teaspoon of baking soda
- 1/4 teaspoon of fine grain sea salt
- 1/2 cup of chopped pecan nuts
- 50g of dark chocolate chips
- 2 tablespoons of peanut butter
How to make vegan vegan brownie with a twist
- Preheat the oven to 175 degrees Celsius
- In a small glass, mix the flax seed and warm water and set aside - this will be the egg replacement
- Boil some water, place it in a pan, and put a bowl containing the chopped chocolate and coconut oil, into the pan
- Stir the contents after 1 minute or so and remove the bowl from the pan when the chocolate and coconut oil has melted, setting it aside to cool
- Mix the oat flour, baking powder, baking soda and salt together
- When the chocolate has cooled, add the flaxseed mix, sugar, cocoa and vanilla, and mix it thoroughly
- A little at a time, add the dry ingredients to the chocolate, and mix until it's combined
- Finally, mix in the pecans and chocolate chips
- Heat the peanut butter for a couple of minutes
- Fill a quarter of each ramekin, gently pushing the mix so that the entire base of the ramekin is covered
- Add a layer of the heated peanut butter
- Add roughly the same amount of the chocolate mix on top of the peanut butter
- Put the ramekins on a baking tray to make them easy to take in and out of the oven
- Bake for 20 minutes
- Remove them from the oven, let them cool, and when you're ready to serve, heat them in a microwave until the dessert is a little warm and it's a bit softer - this can range from 10 - 40 seconds depending on the level of power used
- Put a large scoop of vegan ice-cream on top of the brownie, within the ramekin, or serve it on a side dish
