Recipe: chocolate coated peanut surprise

I was feeling lazy but wanted to make something sweet, so I surfed the internet for some inspiration and amended what I found, to create this chocolate coated peanut surprise.  

This recipe makes between 20 and 25 surprises’

Ingredients for vegan chocolate coated peanut surprise

  • 1/4 of a cup of crunchy peanut butter - I used the one by Meridian which consists of 100% nuts

  • 1/4 of a cup of coconut cream, which needs to be left, upside down, in the fridge overnight

  • 1 tablespoon of golden syrup

  • 5 shakes of salt

  • 1/8 of a cup of quinoa

  • 60g of dark vegan chocolate

How to make vegan chocolate coated peanut surprise

  1. Rinse the quinoa and spread it on a baking tray

  2. Put it in the oven for fifteen minutes, on a heat setting of 100 Celsius/212 Fahrenheit

  3. Put the peanut butter and coconut cream in a bowl and mix it with an electric hand whisk until it combines.

  4. Add the golden syrup and salt and mix briefly.

  5. Remove the quinoa from the oven and toast it in a frying pan or something similar so that you can spread it out and move it around while it’s toasting.

  6. To avoid it burning, when it has browned lightly, remove it from the heat.

  7. Add half of the peanut butter mix to the quinoa and stir.

  8. Create a layer of this mix at the bottom of each cup.

  9. Put the other half of peanut butter mix, which doesn’t have any quinoa in it, on top of the initial layer.

  10. Put the cases in the freezer while you do the next step

  11. Melt the chocolate in the microwave or by putting it in a bowl and placing the bowl in a pan of hot water

  12. Remove the cases from the freezer and finish by adding the final layer i.e. the melted chocolate

  13. Put them in an air tight container and keep them in the freezer until you’re ready to eat them
