Recipe: Hondvo (vegetable cake)

This recipe serves 4
Ingredients for vegan Hondvo
1.5 cups of Hondvo flour
200g of vegan yoghurt - I used this one
2 chillies
400ml of water
roughly 1cm cubed of ginger without the skin
1.5 teaspoons of salt
1/4 of a teaspoon of turmeric powder
a pinch of bicarbonate of soda
2 carrots
1 tablespoon of oil
2 or 3 dried chillies (optional)
1/2 teaspoon of mustard seeds (optional)
1/2 a cup of sesame seeds
1/2 teaspoon of eno
How to make vegan Hondvo
blend the yoghurt, chilli, water, ginger, salt, turmeric, bicarbonate of soda together
add the flour and blend for 10 seconds
peel and grate the carrots
put the contents of the blender and the carrots in a container that has an airtight lid and mix it thoroughly
put the lid on the container and put it in an airing cupboard, on the boiler or somewhere warm
leave it overnight
preheat the oven to 180 degrees
add the eno to the Honvo mix and keep stirring until you see it frothing/bubbling a little
heat the oil in a pan or in the microwave
once hot, either add the dried chillies and mustard seeds, put the lid on the pan and set aside when the seeds start popping and then complete step 11, 12 and 13 or simply mix the oil into the Hondvo mix and complete step 11, 12 and then go to step 14
lightly brush the muffin tray/ovenproof dish with oil
pour the Honvo mix into a muffin tray or an ovenproof dish
pour the oil with the mustard seeds and dried chillies over the Hondvo mix (optional, see step 10)
sprinkle sesame seeds on top of the Hondvo mix
when the oven is ready, put the Honvo in the middle of the oven and let it cook until it’s golden brown
check the oven after 40 minutes as it will be done between 40 and 45 minutes
let it cool and then enjoy with a cup of Indian tea
Variations
You can put the following in the Hondvo instead of, or as well as, carrots
courgette
dudhi
cooked rice
a combination of the above
Hina, is a friend of mine. She made Hondvo in a muffin tray when her family went for a picnic. I’ve never seen or heard of anyone doing this before. It’s such an awesome idea!
