Recipe: quick and easy pasta in mushroom sauce
This recipe serves 4
It takes about twenty minutes to prepare
The cooking time is around 20 minutes
Ingredients for the Mushroom Sauce
300g of pasta - I used wholewheat fusilli
1 teaspoon of olive oil
1 teaspoon of vegan butter - I used this one
300g of mushrooms
1 cup of stock - I used this one
½ teaspoon of sea salt
½ teaspoon of ground black pepper
250g of vegan cream - I used this one
40g of grated vegan cheese (optional) - I use this one
A handful of chopped parsley
How to make the Mushroom Sauce
Wash and slice the mushrooms, keeping 2 or 3 aside
Heat the oil and butter in a wide saucepan, and saute your mushrooms until they’re golden
Add the salt and pepper
Stir it on a low heat
After a minute or so, mix the stock with water and add it to the pan
After a couple of minutes, add the cream
Use a hand blender to blend the sauce until it’s smooth
Slice or chop the mushrooms that you kept aside, and add them to the pan
Whilst the sauce reduces, boil the water and cook the pasta
When the sauce is the right thickness for you, drain the pasta, add it to the sauce and give it a good stir
When you plate it up, add some parsley.

You can enjoy this in so many ways! Some examples are on toast, in a vol-au-vent or with a jacket potato.
