Recipe: Plant-based Palak Paneer

Ingredients for vegan palak paneer
• 1/2 a teaspoon of mustard seeds
• 1 teaspoon of cumin seeds
• 2 sweet neem leaves
• 1 pinch of asafetida
• 1 chilli – change this depending on your love for spice
• 2 fresh tomatoes - diced
• 150g of young/baby spinach leaves – blended, chopped or left whole
• 400g of tofu – chopped into bite-size cubes
• salt to taste
• 1 teaspoon of dried coriander powder
• 1/4 teaspoon of turmeric
• 1 tablespoon of lemon juice
• 1 handful of freshly chopped coriander
How to make vegan palak paneer
Chop the tofu into bite-size chunks
Heat the pan a little and then add the mustard seeds and cumin seeds
When the seeds start to pop, add the sweet neem leaves and asafetida
After 30 seconds add the chilli
After 10 - 15 seconds add the tomatoes
Add a little water and let it cook for 2 minutes
Add the spinach in whichever form you prefer ie blended, chopped or whole
Add the dried coriander powder, turmeric and salt and stir
After 3 minutes add the lemon juice
While it cooks, heat another pan and put the tofu in it, moving it around while it cooks so that the pieces become golden brown
Stir the contents of the other pan and taste it to check if you would like to add anything, if not, when the tofu is mostly golden brown, add it to the spinach and mix it in gently
Garnish with coriander and turn the heat off

with rotli/chapati
with a wrap
with Naan
with rice
