Recipe: quick and easy coffee and walnut cake
This recipe serves 4
It takes about twenty-five minutes to prepare and the same amount of time in the oven
Ingredients for the Coffee and Walnut Cake
For the cake:
100g of margarine
100g of soft brown sugar
200g of self-raising flour
1 teaspoon of baking powder
1 teaspoon of bicarbonate of soda
1 tablespoon of instant coffee granules
200ml of boiling water
1 teaspoon of white wine vinegar
1 teaspoon of xanthan gum
75g of chopped walnuts
For the frosting:
1 tablespoon of coffee
3 tablespoons of boiling water
100g of icing sugar
50g of margarine
25g of walnuts
How to make the Coffee and Walnut Cake
Get something that’s shallow and wide so that you can cool the coffee in it
Make the coffee and set it aside to cool in the container mentioned above
Preheat the oven to 160 °C for a fan-assisted oven
Put the margarine in a bowl and spread it out with the back of a spoon
Add the sugar and use an electric whisk or blender to cream it together
Add all of the remaining ingredients, including the coffee that you set aside earlier, and mix until it’s combined
Get two 7” cake tins and line them with greaseproof paper - I used this method
Divide the mixture between the cake tins
bake it for 20-25 minutes
While it’s baking, make the coffee for the icing and set it aside
You’ll know it’s ready when the cake springs back slightly when you press it gently in the centre
When it’s ready, remove them from the oven, take the contents out of the cake tins, remove the greaseproof paper and leave them to cool on an oven shelf
Meanwhile, get a bowl and use the back of a spoon to spread out the margarine
Add the icing sugar and the coffee, which you set aside earlier, and mix it using an electric whisk
Spread it on one of the cakes, add the other cake on top of it and then spread the rest on the other cake
Sprinkle the walnuts on top of the cake
