Recipe: home-made yoghurt

This was quick, easy and really rewarding. I'm not sure why I was so chuffed about it. Perhaps it was because it reminded me of the enjoyment I got from the yoghurt that my Grandmother used to make yogurt at her home. Either way, I think anyone who likes yoghurt, should try it at least once! :)

How to make vegan yoghurt

  1. Boil the milk - I used soya milk but I plan to try it with oat milk soon

  2. Let it cool until it feels hot if you put your finger in it but it is tolerable

  3. When it is the temperature described above, mix in the yogurt starter

  4. Put a bowl of water or something in the microwave and heat it using full power, for 2 minutes

  5. While the microwave heats up, put the yogurt mix in an airtight container

  6. Put the container within another airtight container, which has a lid and put the lid on it securely

  7. Wrap a towel around it

  8. Without turning it on, put it in the microwave and leave it there for about 6 hours

  9. Don't open the microwave during this time

  10. When you remove it, it will be warm and should have set

  11. Put it in the fridge so it's cold and ready to eat

Recipe: A smooth, crunchy, cold and warm dessert within 5 minutes

This is what I call fast sweet food.

Ingredients for a crunchy, warm and cold vegan dessert

  • Swedish Glace Iced Non - Dairy Dessert - we used Vanilla
  • Pecan and Maple Crisp cereal

How to make a vegan crunchy, warm and cold vegan dessert

  1. Put some scoops of the Swedish Glace in a bowl
  2. Add some Pecan and Maple Crisp cereal on top
  3. Enjoy!

This created a smooth and crunchy dessert which was simply moorish.

Recipe: Cauliflower Shaak (curry) within 25 minutes

Cauliflower Shaak is a nutritious dish which can be enjoyed with wraps, rice, Rotli or even on its own. This recipe serves 2.

Ingredients for the cauliflower Shaak

  • 1 small cauliflower
  • 2 tomatoes
  • 1 fresh chilli
  • Oil
  • 1/2 a teaspoon of Rye
  • 1 teaspoon of Cumin seeds
  • Sweet Neem Leaves
  • A pinch of Asafetida
  • A pinch of Turmeric powder
  • Salt
  • 1 teaspoon of dried coriander powder

How to make the cauliflower Shaak

  1. Chop the cauliflower up into small pieces - it's tastier if the pieces are small
  2. Chop the tomatoes and blend
  3. Add the chilli and blend it all for another 5 seconds
  4. Heat some oil - I use sunflower oil or coconut oil
  5. When it's heated, add the Rye and Cumin seeds
  6. Add the Sweet Neem Leaves and Asafetida
  7. After the seeds have popped add the blended tomatoes and chilli
  8. Let it cook
  9. Add the cauliflower
  10. Add the Turmeric, salt to taste and the dried coriander powder
  11. Stir and let it cook until you feel it's ready to be served - some people like it very soft and others like to eat it when it's semi cooked
  12. Garnish with fresh coriander
